Homemade soya milk

First time making soya milk! 😇 100g dry soya bean, wash clean and soak overnight. Sort the beans by picking out the rotten and the ones that are not soaked at all. 🤔 I got 210g good soaked beans this time. Add 100g soaked beans + 4 cup of cold water to Vitamix, blend at level 10 for 2 minutes.  Pour into an oil free tall pot, bring it to boil on medium heat, stir occasionally to prevent it from burning. After boiling, continue cooking for another 15 mins. Beans need to be fully cooked, or you will be poisoned by this innocent milk. 🫣 DO NOT watch your phone during the boiling process.!  STARE at the pot at all time! There we go... A delicious drink from mother earth 🌎  The Vitamix is very powerful, and you can hear it stating that loud and clear. 😜 I don't even notice the pulp when I drink it. Ginger Snap Cookies

3/4 cup brown sugar 2/3 cup vegetable oil 1/4 cup molasses 1 egg 1. Mix above in a stand mixer until smooth. 2 cup all-purpose flour 2 tsp baking soda 1/4 tsp salt 1/2 tsp ground cloves 1    tsp ground cinnamon 1    tsp ground ginger 2. Mix above in a bowl, and add to the stand mixer. Mix until it comes to a ball. 3. Preheat oven to 375 F. 4. Use 1 Tbsp measuring spoon to scoop out the dough and roll it into a ball. Place the dough balls 2 inch apart on ungreased baking sheets, about 36 cookies in total. 5. Bake for 12 mins, remove from oven and transfer to wire rack immediately. Let cool completely before serving. Modified from  Mom's Ginger Snaps , thanks! My family prefers less sugary and oily cookies.

oven roasted turkey drumsticks

Turkey drumsticks on sale, first time buying it. Never cooked it before.  I remember the ones sold at Universal Studios, big, smoky, so tasty ... First, we need smoked salt! Found this one on amazon.ca. Roll up the skin on each drumstick.  Dissolve 50g brown sugar and 50g smoked salt in hot water. (NOTE: This is for 9 turkey drumsticks. Adjust the amount of salt based on the size and number of drumsticks. It is better to add less than more.) Add cold water to bring it to room temperature or lower.  Add some Bay leaves and whole black peppercorns.  Submerge all drumsticks in the water, add more water to cover them all.  Cover and store in the fridge for 12 hours. Mix dry rice with a little cooking oil and spread it evenly in the pan.  Roll down the skins on each drumstick, and lay then flat on a baking rack.  Use convection roast mood, 425F for 90 minutes, turn halfway.   This delicious bread recipe is from a retired cook  https://www.youtube.com/watch?v=9vgaq6nDWJ4 I found it easy to follow and hard to fail.  Bread Flour 500g Sugar 1/4 cup Milk Powder 2 Tbsp Active Yeast 1 tsp Egg 2 35% cream 50g Milk ~180g (warm)       Butter 30g Salt 1/4 tsp Let rest for 20 mins. Divide into 12 pieces, roll into balls, roll out to an oval shape, then curl up inwards. Let it rise to 60% full of the pan. Brush with egg wash, and optionally sprinkle with sesame seeds. Bake at 355F, in the lower rack, for 20 mins.  Check the color during the last 5 mins. Cover with a foil if it gets too dark.     Enjoy it warm or cool!

葱姜炒龙虾 1. 龙虾尾洗净,剪去那些毛糊糊的小脚,顺着一分为二,再横着切成小段; 2. 加料酒、一点点盐、菱粉拌匀;(下图切圈儿的,不好吃到嘴里) 3. 姜切片,葱切段,蚝油+海鲜酱+菱粉+水调和; 4. 炒锅烧热加油,炒香姜片和葱白,加入龙虾段翻炒,加入少许开水和剩余姜片葱段,加盖焖煮几分钟; 5. 加入蚝油调料水勾芡,起锅装盘。

Water Roux Dough: 35g bread flour 175ml water In a small pot, mix bread flour and water completely; Put the pot on medium heat, stir constantly until it starts to solidify; Remove from heat and let it cool down to room temperature. Bread Dough: 550g bread flour 1 tsp salt 1 Tbsp dry yeast 1/3 cup granulated sugar 2 eggs (use 1.5 in the dough, and save 0.5 for brushing later) 150ml 5% cream 50g unsalted butter at room temperature Mix the dry ingredients in a stand mixer bowl, then add the rest ingredients and cooled water roux dough; In a stand mixer, mix for 8 minutes until the dough is elastic; Lightly shape the bread dough into a big ball and put in a glass mixing bowl brushed with oil, cover with plastic wrap; let it rest for 45 mins; Divide the dough into 14 pieces, lightly shape each into a ball, place on a baking sheet, cover with plastic wrap, and let it rest for 1 - 1.5 hours. Steamed Sticky Rice

Wash rice with cold water until water run clear;  Add water to rice in a big bowl, cover it and let it soak in the fridge overnight; Lightly oil 2 dinner plates; Lay a thin layer of rice in each plate, add a little water; Stream on high for 12 minutes after water boils, adjust time with rice amount; Take them out of the streamer, add a layer of red bean paste in one plate; Using a long knife, loose up the rice layer in another plate, flip over on the plate with red bean paste filling; Decorate the rice with dates, Gogi berries, raisins, dried cranberries, etc; Take the rice plate back to the streamer, steam on high for another 5 minutes. INGREDIENTS: 1 1/2 cups 35% heavy cream 3 large egg yolks 1/4 cup granulated sugar 1 tsp vanilla extract a pinch of salt INSTRUCTIONS: Pour heavy cream into a small sauce pan, bring it to simmer under medium heat, remove from heat and let it cool to 165F; Boil some water; Preheat oven to 300F; Separate egg yolks in a medium bowl, add granulated sugar and salt, hand mix it well with a egg mixer; egg whites are just the right amount for some coconut macaroons ; Slowly add in the heavy cream, mix constantly and slowly; Add vanilla extract at last and mix it well; Put 6 ramekins in a baking dish, add the egg & cream mixture to the ramekins through a fine filter; Transfer the baking dish to oven, add boiling water into baking dish to 2/3 of the height of the ramekins; Loosely over the baking dish with foil; Bake for 50 minutes, the center should be a little jiggly when done; Remove from oven, let it cool at room temperature; Cover each ramekin with a small p...
