10 inch Sponge Cake
This cake is the base for many variations of fruit cakes.

Ingredients:
8 egg yolk
1/4 cup sugar
80ml oil
80ml orange juice/soda
1/2 cup + 2 Tbsp cake flour
8 egg white
2-3 drops of white vinegar
pinch of salt
1/4 cup sugar
Directions:
1. Separate 8 eggs into 2 large bowls;
2. Mix egg yolk with sugar, oil, orange juice, and flour;
3. Beat egg white until soft peaks form, mix in white vinegar, salt, and sugar;
4. Fold egg white mixture into egg yolk mixture, pour into a 10 inch spring/round pan;
5. Bake at 350F for 45 minutes;
6. Cool cake upside down, rest on the edge of 2 bowls. This prevents the cake from falling back;
7. Whip 500ml 35% heavy cream until stiff peaks form, add 1/4 cup confectioner's sugar;
8. Slice into 2-3 layers, assemble it with whipped cream and your favorite fruits.
