Roasted Cashews

INGREDIENTS: 1 kg raw cashews 2 Tbsp fresh rosemary leaves, coarsely chopped 1 tsp cayenne 4 tsp brown sugar 3 1/2 tsp sea salt 1/8 cup melted butter DIRECTIONS: Preheat oven to 375F, put all raw cashews in a large baking sheet, preferably single layer, bake 10 mins to roast through; In a heat resistant large pot (stainless steel or glass), mix rosemary leaves, cayenne, brown sugar, sea salt together, add melted butter and mix well;  Add all roasted cashews in the large pot, stir to coat cashews evenly, enjoy the strong rosemary aroma while stirring. Serve warm and store leftover in an air tight container. Such a seductive snack! I grabbed a tiny bowl and filled it up, and forbid myself to get a refill.
