Roasted Cashews
INGREDIENTS:
1 kg raw cashews
2 Tbsp fresh rosemary leaves, coarsely chopped
1 tsp cayenne
4 tsp brown sugar
3 1/2 tsp sea salt
1/8 cup melted butter
DIRECTIONS:
- Preheat oven to 375F, put all raw cashews in a large baking sheet, preferably single layer, bake 10 mins to roast through;
- In a heat resistant large pot (stainless steel or glass), mix rosemary leaves, cayenne, brown sugar, sea salt together, add melted butter and mix well;
- Add all roasted cashews in the large pot, stir to coat cashews evenly, enjoy the strong rosemary aroma while stirring.
- Serve warm and store leftover in an air tight container.
