Banana Bread

The yogurt makes all the difference, so healthy and moist. INGREDIENTS: 2 cups all-purpose flour 1 tsp baking soda 1/4 tsp salt 100g vanilla yogurt 1/3 cup brown sugar 1 egg 4 medium sized overripe banana  DIRECTIONS: Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.  In a large bowl, combine flour, baking soda and salt.  In a separate bowl, hand mix egg, yogurt, and brown sugar, stir in mashed bananas.  Stir banana mixture into flour mixture; stir just to moisten.  Pour batter into prepared loaf pan, spread evenly. Sprinkle a handful of chopped walnut on top. Raisin Bran Cereal Muffins

Ingredients: 4 cup raisin bran flakes cereal 2 cup milk 1/2 cup salad oil 2 eggs 2 cup flour 1/3 cup sugar 6 tsp baking powder 1 tsp salt 1cup chopped walnuts Directions: Add milk to soften cereals. Add oil and eggs. Blend well. In a separate bowl, mix flour, sugar, baking powder and salt. Mix dry ingredients with bran flakes mixture. Mix in walnuts. Line muffin tins with paper liner, and fill with one scope of batter each cup. Bake in 400 degree oven 18 minutes. Yield: about 22 muffins.
