红烧肉 软糯香甜，肥而不腻 五花肉    1块 八角        3个 桂皮        1小段 香叶        5片 冰糖        1小把 姜            4大片 葱头        3段 料酒        1瓶盖 老抽        1大勺 生抽        2大勺 盐            适量 五花肉洗净，放铁锅里烙皮至金黄，刮掉皮上秽物，再次洗净，切小方块； 中火油锅，下八角和桂皮炒香，捞出备用； 下姜，葱头炒香，下肉，加料酒去腥，翻炒至表面稍微金黄，全部盛出备用； 中火油锅，下冰糖至融化，下肉，翻炒上色。注意火候，炒过则苦； 下老抽和生抽拌匀，将八角，桂皮，姜，葱头倒回锅里； 加开水没过肉，加盖，中小火煮50分钟，中间翻拌2次，根据口味适当加盐； 大火收汁，起锅装盘。
