Sushi
Inspired by the Sushi series of the pioneer woman, we had an adventure tonight, making some hand rolls and the infamous California rolls.
Every time we go to the Sushi buffet, my son orders the cucumber hand rolls, a batch of them. Every time the hand rolls are served last. So tonight, mom served the hand rolls first! That made them taste so much better. ;)
Mom-and-son team is a winning team! I rolled the California rolls, he dressed them with roasted sesames, cut and plated them beautifully. We don't have avocado or fish eggs, so my son called it "Imitation California roll"! And it still taste yummy!

INGREDIENTS:
10 sheets of Sushi Nori (roasted seaseed sheet)
1/2 cup rice vinegar
1/4 cup sugar
1/8 cup sake or mirin (or Japanese rice seasoning)
4 cups Sushi rice
1 large English cucumber, sliced thin
Makes 20 cucumber hand roll
PROCEDURE:
- Cook rice:
- Wash rice twice until water runs clear;
- Add to rice cooker, add water to mark 4, let it soak for 20 mins before cooking;
- Let it stand 10 mins after rice cooker stops.
- In a small pot, add rice vinegar, sugar, and rice seasoning, mix and bring to a boil; let it cool to room temperature;
- In a large bowl, gently spoon out the cooked rice, add the liquid from step 2, fold rice gently to incorporate it; cover with a towel and let it stand for 10 mins; fold it again gently;
- Fold a sheet of Nori in half, it separately easily alone the crease;
- Spread a spoonful of rice on the left half of the Nori, add some cucumber slices, roll it like an ice cream cone, seal it with one or two rice;
- Enjoy!
