芋头耶奶西米露 ~ Taro Coconut Milk



My favorite three ingredients make this wonderful dessert that I cannot resist! 

INGREDIENTS:

1/2 cup Tapioca Pearls
3 cup water

8 taros
4 cup water
1 can coconut milk
1/3 cup of sugar

DIRECTIONS:

  1. Add 1/2 cup tapioca pearls to 3 cups of boiling water, cook medium high for 5 minutes; remove from heat, and let it simmer for 20 minutes;
  2. Peel and cut 8 taros into small chunks, add to a medium pot;
  3. Add about 4 cups of water to cover the taros in pot, adjust as needed; bring to boil and cook for additional 5 minutes or until taro is soft and fully cooked;
  4. Add coconut milk, cooked tapioca pearls, and sugar. Bring it to boil.
  5. Enjoy it hot! Or let it cool down and store in the refrigerator. It is still delicious when it is cold.
