Instant Pot Yogurt

First time making yogurt at home! 



With the help of an Instant Pot, this task becomes so doable. 
The total cook time is about 11 hours, but you only need to work about 10 minutes. 

This recipe uses skim milk and fat free yogurt. Due to the low fat in these ingredients, the produced yogurt is not very solid but a bit running. I'd image if you swap these with higher fat dairy,  the produced yogurt will set a bit more. Adjust the ingredients to your personal preference. 

I love this low fat yogurt!

INGREDIENTS:

8 cup skim milk
100g IOGO 0% vanilla yogurt (with active bacterial culture)

TOOLS:

Instant Pot with Yogurt setting
containers to store your yogurt
bowl
spoon
whisk
thermostat (I used a wireless one)

PROCEDURE:

  1. Put clean bowl, spoon, whisk, empty yogurt container inside your Instant Pot, add some water and press Stream to sterilize everything that will come in contact with dairy; take all out when it is done;
  2. Add milk to instant pot, close lid and vault, press "Yogurt" button and Adjust + once, it will read "BOIL";
  3. Take 100g yogurt out of fridge and let it come to room temperature;
  4. When "BOIL" is done, check milk temperature, it should be 180F. Cook again if the temperature is less than 180F. It took me 2 more tries to bring the milk to that temperature;
  5. Take the inner pot out, and put it into the sink with very cold/ice water; whisk gently to help it to cool down to 110F;
  6. In the sterilized bowl, add 100g yogurt, add about 1 cup cooled milk, mix well; then gently pour into the inner pot, and whisk to mix well;
  7. Put the inner pot back, close lid and vault, press "Yogurt" button again, it will read "0:00", enter "10:00" so it cooks for 10 hours;
  8. When it is done, spoon yogurt to your containers and put them into fridge to settle at least a couple of hours before serving;
  9. Add a drop of honey and pour your favorite cereal, enjoy your healthy home-made yogurt.
